General Hygiene

All employees, contractors and visitors entering production areas are provided with suitable clean and protective clothing. Hairnets and work clothes are compulsory for all employees in production and storage areas.

It is forbidden to wear jewellery, rings, watches, necklaces, earrings and piercing in all production areas.

All employees receive medical examinations in accordance with local and state legislation.

All employees receive a hygiene brochure and are given intensive hygiene training which is regularly performed in accordance with the training program.

Good Manufacturing Practice (GMP)

All facilities, storage areas and equipment used for production have been designed according to GMP standards. In order to produce under clean and sanitary conditions, Gürsoy strictly applies GMP rules. As part of GMP management we have invested  since the year 2000 to improve food safety facilities in an effort to reduce any possible sources of contamination in the factory. The company has also upgraded most of the old equipment with newer technology to ensure hygienic production conditions.

All raw material areas have been physically separated from finished goods production areas.

Processing control procedures have been implemented into roasting and sanitising to eliminate any potential bacteria. Floors, walls and platforms in the factory and storage areas have been renewed with easily cleanable surfaces.

Sanitary and changing rooms are designed to remain separated from the production areas.

Wood is avoided in all production areas and plastic pallets are used.

We ensure that our technical team pay utmost attention to meeting hygiene standards and take the necessary precautions to avoid cross contamination during maintenance performed within the production areas.

We have a documented sanitary program in place which defines the cleaning products to be used together with the cleaning schedules.

Control of raw materials and finished products

All incoming raw and packing materials which are to be used in production are purchased from approved suppliers. All raw hazelnuts are checked on delivery as per our purchasing specifications with regards to physical, chemical and aflatoxin tests. If they conform to the specifications, they enter our stock system and are allocated a special lot number for traceability purposes.

During the production process, several tests are performed to ensure the products conform to customers specifications. All finished goods are then further analysed with regards to physical, chemical and microbiological aspects including aflatoxin before releasing for shipment.
